Hi,
Unfortunately this is not possible using the buttons from footer. That component is a Sharer which shares a link that is specified in footer/Sharer/settings.xml, through the value of shareUrl attribute, on those social networks. You can add an external link to your YouTube page in the main menu (menu.xml) like this:

To change the “Leave a massage” text, edit the pages/contact/Spacer/text.xml;
To change the contact information text, edit the pages/contact/Spacer2/text.xml.
